Made with the fruit picked fresh and at peak ripeness, the Peach and Ginger Preserves are made with pectin that is conducive to using less sugar. They have a much lower concentration of sugar - around 30 - 40% versus commercially made preserves that are anywhere from 10 - 20% higher. This allows the true fruit flavor to shine.
Candied ginger pairs nicely with the sweetness of the peaches, not adding too much heat to the balanced preserves. Simple and wonderful on toast, these preserves lend themselves well to savory uses such as a glaze for pork, poultry, or shrimp for a sweet touch to a grilled protein.
