The idea for Preserve Farm Kitchens was born out of a discovery that 20% of fruits and vegetables grown never make it off farms because they aren't perfect enough for grocery stores' standards, resulting in billions of pounds of produce going to waste every year. Merrille Olson rediscovered a way to reduce food waste with basic food preservation techniques by taking excess or imperfect produce and transforming it into food people love, including preserves, sauces, condiments, fruit syrups and even Bloddy Mary mix.
Shakshuka comes from the spice markets of Morocco and literally means "all mixed up." Preserve Farm Kitchens mix local tomatoes and ripe red peppers with cumin and a touch of chile peppers. Try it on fish or with garbanzo beans and feta cheese, or with roast lamb.
